Recipe of the week: pesto salmon, green beans and wild rice

This is a recipe from Jamie Oliver’s “Ministry of Food”. My housemate Jonny received this as a Christmas cookbook, it’s a great gift (well, more for me). There are so many quick recipes, many of which are surprisingly healthy. This will definitely be one to cook again.

Put your wild rice on to cook – this will take 30-40 minutes.

Place your green beans on foil, then put the salmon on top of the beans and then a good splodge of pesto on top. Season, then wrap up and bake in the oven for 15minutes.

While the salmon is baking, drain the rice (once cooked), then heat in a pan – with a little chilli powder, tomato puree and garlic puree.

Serve the rice, then unwrap the foil parcels and place the beans and salmon on top.
